Handcrafted with high-quality sheep's milk, it combines the characteristic intensity of Castilian cheeses with a smoother and creamier texture, resulting from a shorter and more balanced aging process.
With a firm yet pleasantly tender paste, it presents a round and elegant flavor, with delicate milky notes and subtle hints of nuts. Recommended pairing:
Excellent with lightly aged white wines, fresh rosés, or young reds from the Denomination of Origin Ribera del Duero. It also pairs very well with mild honeys, quince, or nuts.
